Instructions
Place all ingredients in the slow cooker (except yogurt and jalapeño), but save some of the parsley for garnish. Cook on high for at least 2 hours, or on low for 4-6 hours.
Garnish with remaining parsley and enjoy!
*Optional: Add a dollop of dairy-free yogurt and jalapeno slices

1 can Diced Tomatoes (medium, diced)
1/2 Yellow Onion (medium, diced)
2 Garlic (cloves, minced)
1/4 cup Parsley (chopped and divided)
2 tsps Cumin

2 tsps Sea Salt
2 cups Water
2 cups Vegetable Broth
1 Tbsp Unsweetened Coconut Yogurt (optional)
1/2 Jalapeno Pepper (sliced, seeds removed, optional)
